Pierre Larmandier en zijn vrouw Sophie startten in 1988 samen het wijnhuis Larmandier-Bernier. Gevestigd in Vertus in de Côte de Blancs maken ze samen met hun zoon Arthur wijn van 18 hectare. Deze wijngaarden liggen in de gemeenten: Avize, Chouilly, Cramant, Oger, Vertus en Bergères-lès-Vertus. Er wordt al lang een groot belang gehecht aan het biologisch en biodynamisch werken. Ze werken al 30 jaar biologisch en 22 jaar biodynamisch. De certificeringen zijn later gekomen, maar de wil om gezonde wijngaarden te bewerken is er al lang. In de winter van 20/21 is er voor het eerste een experiment met grazende schapen in de wijngaarden gestart om in het bodemleven meer leven te krijgen. 

De druiven worden volledig rijp geoogst, dat is vaak minimaal 5 dagen later dan de meeste collega's uit de buurt. De basiswijnen vergisten met de natuurlijke gisten (ook malo) op vaten van Stockinger en rijpen lang. Alleen voor de rosé worden betonnen eieren en rvs gebruikt. Pas na 10 maanden gaat de familie werken aan de assamblages en tot die tijd krijgt de basiswijn tijd om te rijpen. De verschillende cuveé's worden na mimimaal 2 jaar rijping pas verkocht. 

De Champagnes van Larmandier-Bernier volgen wij al lang, in het verleden heeft Martijn de Longitude nog als huischampagne geserveerd bij de Nederlanden! Het zijn zeer verfijnde, pure, droge Champagnes die ook op fles nog prachtig kunnen rijpen. Een aanvulling van enorm hoog niveau!

"In the 1990s, Pierre Larmandier and his wife, Sophie, began to work the soils of their vineyards and abandoned the use of herbicides, moving toward organic and then biodynamic farming. Sophie provided the inspiration. “I always said I could never marry a vigneron,” she told me, “because of all the chemicals they use in the vineyards, but Pierre changed my mind.” Even if Champagne’s landscape is slowly beginning to change, they have had few imitators. "I thought I could be five years ahead of the others in giving up on chemical farming," Pierre observed to me, "but I never imagined that I might be 50 years ahead!" Pierre's father had always advocated picking mature fruit, and with the new farming methods, the wines became almost too concentrated and tightly wound, he relates. So, changes in the winery followed suit: fermentation in wood—foudres, demi-muids and barrels (today, mainly from Austrian cooper Stockinger)—instead of stainless steel, and the use of ambient instead of selected yeasts."
