Fermentation
All wines adopt a wild spontaneous fermentation to add in texture and expression of our land. Depending on the vintage, a minimal sulphur approach is given to help preserve the wines whilst showcasing the expression of the region.
Aging
Maturation in a range of French and Slavonian oak from barrique, puncheons, and foudres, with 10% new oak introduced with each vintage.
