Frequently in the shadow of Chassagne-Montrachet or Puligny-Montrachet, Saint-Aubin has managed a remarkable qualitative shift these last few years. With 113 hectares of whites (of which 87.5 are Premier Cru) and 50 hectares of red (of which 35.5 of Premier Cru), the appellation has nothing of which to be ashamed. To the contrary, these white limestone and clay soils make excellent white wines. The altitude varies between 300 and 350 meters, sometimes with significant slopes, oriented southeast or east, as is the Premier Cru "Sur Gamay". Alix de Montille makes four barrels,.

The hamlet of Gamay, which is part of the Saint-Aubin appellation, cultivates ambiguity with the variety of the same name. To avoid all confusion, some growers wish to see "Sur Gamay" rebaptised "Sous la Roche Dumay". Whatever it will be, in this parcel, which flirts with Puligny-Montrachet, chardonnay thrives very well.

Alix de Montille only selects parcels that align with her demands: controlled yields from carefully pruned and plowed vines. Nothing is purchased unless the parcel is sustainably farmed. Some vineyards are even in the process of being converted to organic viticulture. Alix works with fruit from approximately five hectares spread between the Côte de Beaune, the Côte Chalonnaise, the Mâconnais and Chablis. Almost 35,000 bottles are tagged "Deux Montille Soeur-Frères" every vintage.
